Lemon Poke Cake
1 pkg. lemon cake mix
1 pkg. 4 servings lemon pudding mix
1 c. water
1/4 c. oil
1/2 C powdered sugar sifted
juice of 2 lemons
Combine first five ingredients. Blend together on medium speed using electric mixer for 2 minutes. Pour into greased and floured pan. ( I use a tube or bundt pan).
Bake at 350°F. for 45 to 50 minutes. (Do not over bake).
Cool 15 minutes.
Then take ice pick and poke holes into top of cake.
Mix; 1/2 cup sifted powdered sugar and juice of 2 lemons
Pour this slowly over top of cake
allow to cool a while then sift powdered sugar over the top.
