Zuccini Bread (Freezes Well For Do-Ahead)
Ingredients:
3 eggs
1 cup corn oil
3 teasp. vanilla
1 teasp. salt
1/4 teasp. baking powder
1 cup grated nuts
2 cups sugar
2 cups grated, peeled, raw zuccini
3 cups flour
1 teasp. baking soda
3 teasp. cinnamon (I may use less)

Directions:
Beat eggs until light and foamy. Add sugar, oil, vanilla, and zuccini. Mix well, but lightly. Combine dry ingredients and stir until well blended. Add nuts. Pour in two 9 x 5 x 13 loaf pans. Bake 350 degrees for one hour. Freezes well.
