1 to 2 lbs squash
1 large onion
1 to 2 cups grated cheddar cheese
1/3 c milk
salt and pepper to taste
1 roll Ritz crackers
Wash squash and slice into rounds. Chop onion. Boil squash and onions together until tender. Drain and pour in a greased 13 x 9 inch pan.
Mix eggs, milk and cheese together and pour over squash. Salt and pepper to taste.
Crush crackers and spread over mixture. Bake at 350 degrees for about 30 minutes.
