1 cup C and H Golden Brown Sugar, firmly packed
1 cup cooked or canned pumpkin
1/2 cup oil
1 teaspoon vanilla
2 cups sifted all-purpose flour
1 teaspoon soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1 cup raisins
1/2 cup chopped nuts
In mixing bowl, beat together sugar, pumpkin, oil and vanilla. Sift together dry ingredients; add and stir until smooth. Blend in raisins and nuts. Drop by spoonfuls on greased baking sheet. Bake at 350 degrees for 12 to 15 minutes.
Makes 3 to 4 dozen.
No eggs needed in thses moist, soft cookies.
A friend gave me this recipe years ago, 1970's. It is the only pumpkin cookie recipe, I have used.
