2 c. quaker oats
1 rounded tbls. of chilli powder
1 packet of your favorite taco seasoning
1 rounded tsp. of dry minced garlic
1 rounded tbls. of dry minced onion
egg beaters from the cartain or use your own egg wash..
mexican shreaded cheese..
Don't know why this didn't come through the first time..
Put all dry ingredients in food processor and mix until oats are a fine powder (flour consistancy)
Slice zuccinni to 1/4' thick or thinner
Dip zuccinni into egg, then dredge into the flour mixture
Heat oil, enough to coat pan (a little deep) I use olive oil or canola
I use a 20' cast iron skillet, fry until golden brown or slightly darker on both sides (mmmmm).
Blot on a paper towel, top each with cheese, salsa and sour cream. MMMM these are our nachos now that wife has put me on a diet...good if you follow South Beach Diet. Check out a pancake recipe for heart smart we use. This one is my own and the browner you make it the more like nachos it really tastes..
