2 or 3 zuccinnis about 1-1.5
Put all dry ingredients in food processor and mix until oats are a fine powder (flour consistancy)
Slice zuccinni to 1/4' thick or thinner
Dip zuccinni into egg, then dredge into the flour mixture
Heat oil, enough to coat pan (a little deep) I use olive oil or canola
I use a 20' cast iron skillet, fry until golden brown or slightly darker on both sides (mmmmm).
Blot on a paper towel, top each with cheese, salsa and sour cream. MMMM
