vanilla, chocolate, or coconut cream
2/3 C sugar sugar
1/4 C corn starch
1/3 teaspoon salt
2 Cups milk scalded
3 eggs seperated
2 T butter
1 tsp vanilla
1 baked nine inch pie shell
Blend sugar, cornstarch,and salt, slowly stir this mixture into scalded milk. Cook and stir over boiling water until mixture thickens.
Add three tablespoons of hot mixture to the beaten egg yolks.then stir egg yolk mixture into custard mixture. Stir and cook two minutes or until mixture gets thick. Remove from heat and add butter, and vanilla. Pour in baked pie shell.
Whip up the egg whites with some cream of tarter for the topping for pie, put meringue topping on pie and brown in oven.
TIPS;for a coconut pie add three fourths cup flaked coconut before pouring mixture in pie shell. Also sprinkle some coconut over the egg whites before putting in oven to brown.
TIPS; for a chocolate pie add one half cup dry cocoa powder to dry ingredients then add to hot milk mixture before adding the egg yolks.
