Chicken Cacciatore
Ingredients:
2 tablespoons olive oil
6 boneless chicken breasts
6 cloves garlic, crushed and chopped
1 medium onion, cut into thin quarters
1 can (10 1/2 ounce) tomato soup
2 cans (10 1/2 ounce) mushroom soup
1/4 cup water
1 jar sliced mushrooms(4 ozs,drained)
2 cups hot rice

Directions:
Heat olive oil in a large skillet. add chicken breasts and brown lightly on both sides. Remove chicken and add garlic, lightly saute garlic. Add tomato soup, mushroom soup, water, and mushrooms and stir well, add onions, and chicken. Cover and cook over low heat for 35 minutes, or until onions are tender and chicken is no longer pink. Stir often to prevent gravy from sticking. Place hot rice on a platter, place chicken on top of rice and pour gravy over chicken.
Serves 6
