Beet Cake
Ingredients:
1 cup Wesson oil
3 eggs
1 pound can beets(drained)
2 cup sugar
2 cups flour
1 teaspoon soda
3/4 teaspoon salt
1/2 cup cocoa
Frosting ingredients;
3 tablespoons melted margarine
1/4 cup packed brown sugar
2 tablespoons milk or cream
1 cup chocolate chips
1-1/4 cups minimarshmallows

Directions:
Cake;
Pur first 3 ingredients in blender. While blending, add sugar gradually. Sift dry ingredients. Add beet mixture to sifted dry ingredients; mix well. Bake in a greased and floured 9x13-inch pan at 350 degrees for 40 to 45 minutes.
Frost.
Frosting;
Stir until mixed over low heat. Pour and spread over cake.
