Pickled Herring
Ingredients:
8 herring in brine (about 1 3/4 pounds). 4 small yellow onions, peeled, thinly sliced, and separated into rings . 1 1/2 large lemons, thinly sliced and seeded . 2 cups cider vinegar . 1 medium-size bay leaf, finely crumbled . 1 medium-size garlic clove, peeled and quartered lengthwise . 1 1/2 teaspoons mustard seeds . 1 1/2 teaspoons mixed pickling spices . 2 teaspoons sugar .

Directions:
Soak the herring in several changes of cold water in the refrigerator for 24 hours . Remove and discard the herring heads, then fillet each herring, cut the herring into 1-inch.squares and place half in a large heatproof glass bowl, top with half the onion rings and lemon slices . Add the remaining herring, onion rings, and lemon slices and set aside . Bring the vinger, bay leaf, garlic, mustard seeds, pickling spices, and sugar to a boil in a uncovered, large heavy saucepan over moderate heat . Cool 10 minutes and pour evenly over the herring . Cover with plastic wrap and marinate 3 to 4 days in the refrigerator before serving . (OR put in glass lidded jar and put in the refrigerator).
