Beef Jerky ( Venison )
Ingredients:
1 1/2 to 2 lbs. flank steak or venison steak . 1/2 cup soy sauce . 1 teaspoon onion salt . 1 teaspoon garlic powder .
1 tablespoon worcestershire sauce . 1 teaspoon hickory smoke flavor .
lemon pepper. tooth picks . Foil .

Directions:
MIX ALL SPICES TOGETHER ,( HOLD the lemon pepper). par freeze the meat this will make cutting the meat easier. Cut the meat with the grain, 1/2 inch strips . Soak the meat in the marinade . 5 hours ( longer for stronger flavor ) in refrigerator . When done, place the
meat strips on flat surface and sprinkle with lemon pepper both sides and place
tooth pick thru each end of meat strip and hang on oven rack to dry . place foil, bottom of the oven to catch the dripings. Dry in oven at 150 deg. for 8-12 hours on rack until medium dry.
