Wild Rabbit
Ingredients:
2 rabbits, cleaned and cut up in quarters . 1 large onion cut into thin slices . 5-6 strips bacon .

Directions:
CUT RABBIT IN QUARTERS , and halve the back . Brown rabbit in bacon grease . Add salt and pepper to taste . Layer rabbit in casserole dish with sliced onions . On top of rabbit, lay un-cooked bacon strips side by side to cover rabbit . This keeps the rabbit moist and adds flavor . Baste with its own juice often . ( Add water if doesn't make its own juice.) Bake at 350 Deg. for one hour, then at 300 Deg. until tender, usually 2-3 hours.
