Crispy Baked Pork Chops
Ingredients:
Pork chop or chops
Bread crumbs (homemade or bought)
Seasoning of choice
Apricot jam (or your choice)
Salt Pepper
Olive oil

Side;
Frozen or fresh veggies;
broccoli, carrots, cauliflower, etc.
Chopped in about one inch pieces

Directions:
Set oven to 425

Season pork chop or chops with salt, pepper, season salt, etc. Make bread crumb mix with seasonings, and a little dribble of olive oil and mix well.

Then on a baking tray, (I cover with foil to help clean up) coat lightly with olive oil and lay chops on foil. Then take about one teaspoon of fruit jam per chop and spread over each chop. Then press the bread crumbs on top of the fruit spread. Press the crumbs down on the surface so they will stick well. Place in heated oven for 16 minutes, they should be done. Take out and let them rest about five minutes then serve!

I like to put some chopped veggies coated with oil and seasoned on the tray with the chops to let them cook at the same time. I flip the veggies over once about mid way through the cooking time. Pork chops and veggies in one dish!
