Zucchinni Bread
Ingredients:
3 eggs
1 cup oil (I prefer corn oil)
3 teasp. vanilla
1 teasp. salt (or less)
1/4 teasp. baking powder
1 cup grated nuts (optional)
2 cups sugar
2 cups grated, peeled, raw zucchinni
3 cups flour
1 teasp.soda
3 teasp. cinnamon (2 if less is desired)

Directions:
Beat eggs until light and foamy. Ads sugar, oil, vanilla and zucchinni. Mix well, but lightly. Combine dry ingredients and stir until well blended. Add nuts. Pour in two loaf pans. 350 degrees for 1 hour. Freezes well. [Lori & Lillian s recipe from
