Roast Duck
(my secret)
Ingredients:
Spices;
Sage, parsley, sprinkled on top
1/2 c. water
2 or 3 Ducks, (from freezer and thawed)

Directions:
In blue roasting pan, place Ducks and
sprinkle spices on top lightly.
Add
1/2 c. water.
Cover pan tightly with foil.
Secret to Roasting--Read Carefully;
First roast ducks 1/2 hour at 400 degrees.
Shut oven OFF and let cool
down for 15-30 minutes.
Then turn oven BACK ON to 325-330
degrees for about 1 1/2 hours.
(I use a 330 temp as my oven dial is digital and oven seems to run cooler.)
Variation;
Add a carton of thawed
cranberry/orange sauce (made by
Ocean Spray in the freezer section)
on top of ducks.
