About 2 cups leftover chicken, chopped
1 teaspoon dried minced onion
1/2 teaspoon salt
6 Tablespoons margarine or butter
6 Tablespoons plain flour
1 teaspoon salt
1 cup milk
2 Cups chicken broth(homemade,canned or bouillion cubes with water)
3 cans veg-all( or about the same amount cooked potatoes,carrots and green beans)
1 cup self rising flour
1 cup milk
1 stick of butter melted
Put Chicken into a 13 x 9 inch baking dish, mix with vegetables. Set aside. Melt margarine in a medium saucepan blend in flour
and cook for 2 minutes stirring constantly . Add milk and broth and stir until mixture thickens. Add 1 teaspoon salt to sauce. Add this sauce to chicken and vegetables.
Melt the butter for the topping and then add milk and flour until well mixed. spoon this on top of the pot pie,if you pour it on it will sink to the bottom. This is what makes the biscuit topping. Check your seasonings to taste. My sister adds a pinch of poultry seasoning to hers.Sometimes when I use my own veggies I make too much filling and have to save some for later. The filling should come to just below the top of the dish. You can also add a can of cream of chicken soup if you like more sauce. Bake at 350 for 45 minutes to an hour or until topping is light brown and done. Yummy!!
