cups Zucchini (very thinly sliced in food processor) About 4 medium size zucchini
1 3/4 cups Bisquick
3/4 cup chopped Onion
1/2 cup nacho-sliced Jalapenos (you can use a little more if you want it spicier)
1 3/4 cups Parmesan Cheese
(use the kind in the can)
3 Tbsp. Parsley
½ Tsp. Salt
¾ Tsp. Oregano
¾ Tsp. Garlic Salt
¾ Cup Oil
6 Eggs (slightly beaten)
Beat eggs by hand in a large bowl.
Add Bisquick, Parmesan cheese, onion, oil and all the seasonings.
Add Jalapenos and Zucchini.
Mix until all Zucchini are stirred in and coated well.
Bake in 9 x 13 pan at 350 degrees for 45 minutes or until golden on top.
