Butterscotch Pudding or
Pie Filling
Ingredients:
1 c. Brown Sugar
pinch of salt
3 T. flour
2 beaten egg yolks
2T butter
(Parkay)
1 c. milk
(For pie--May want to double the batch for today's modern 8 or 9 inch pie pans.
Depends on depth of pie pan.
My mother
used to fill a shallow pie pan (antique)with a single batch.)

Directions:
Mix sugar, salt and flour together.
Add milk and butter.
Cook on low fire
(in Guardian service or heavy aluminum pan) for 6 minutes.
Add 2 beaten egg
yolks and beat until smooth.
Remove
from fire.
Add one teasp. vanilla.
Stir until vanilla is mixed in.
For pudding, pour into 4-5 pudding dishes
(4-5 oz)
My mom used to feed this pudding to us
when we were home from school sick.
Talk about faster recoveries.
