1 pound smoked sausage (Eckrich works best), diced
1 pound bacon
1 medium onion, chopped
1 package country style hash browns (or 2 pounds fresh Russett potatoes, diced)
In large skillet cook bacon until almost crisp.
Remove bacon from skillet but leave grease.
Brown diced sausage in bacon grease.
Remove from skillet.
Add onion and hashbrowns to the bacon grease and cook, stirring occasionally, until the potatoes are to your liking.
While potatoes are cooking, chop your cooked bacon into bite-size pieces.
Add all meat back to the skillet and mix with the potatoes.
Heat through, about 5 minutes.
