1 10oz box frozen spinach (drained)
2 T butter or olive oil
2-3 garlic cloves chopped
1½ T flour
1/2 Cup milk
1/2 tsp salt
1/4 tsp fresh ground nutmeg
Parmesan cheese (optional)
Defrost spinach and squeeze out as much moisture as possible.
In small sauce pan melt butter or olive oil, add chopped garlic and saute until lightly golden. Then stir in flour to make a light colored sauce, then add milk and stir till creamy.
Add the spinach and stir well to mix. Add salt and nutmeg and stir and serve.
You might like to add a sprinkle of Parmesan cheese on top (optional).
