2 medium acorn squash
1 large apple, diced
2 tablespoons chopped walnuts
1/4 cup packed brown sugar
4 tablespoons margarine or butter
Heat oven to 400 degrees F.
Cut each squash lengthwise in half, then remove seeds and fibers.
Place cut sides down in rectangular baking dish, 13x9x2 inches.
Pour water into dish to 1/4 inch deep.
Bake 30 minutes.
Mix the apple, nuts and brown sugar together.
Turn squash halves cut sides up.
Spoon apple mixture into squash halves.
Top each with 1 tablespoon butter, bake 30 minutes longer.
Makes 4 servings.
