Potato Skins
Ingredients:
8. slices of country smoked bacon.
8oz. Monterey Jack cheese.
1/2 cup Green Onions, sliced.
1/2 cup Sour Cream.
1/2 tsp Black pepper.
1/2 tsp KOSHER salt.
3 Medium Idaho baking potatoes.

Directions:
cook bacon until crispy. Scrub potatoes
thoroughly, and bake potatoes at 400F
oven for 1 hour or until done.

Allow potatoes to cool to the touch. Cut
in half lengthwise. Carefully scoop the
pulp leaving 1/4 in shell. ( reserve the
pulp for another recipe.) Sprinkle your
potato shells with salt and pepper. Add
crumbled bacon and green onions. Top off
with the cheese. Place potato skins on a
baking sheet and place under broiler
until cheese melts. Top off with sour
cream.
