1 cup shortening
1 1/2 cups sugar
3 cups unsifted flour
1 teasp. baking soda
1/2 teasp. salt (opt.)
1 1/2 c None Such Ready-to-Use MincemeAT
2 boxes of Jiffy frosting on hand
Oven 375 degrees
(NOTE; For crispier cookie, substitute 9 oz. package condensed mincemeat, crumbled.)
In a large bowl beat shortening and sugar until fluffy. Add eggs; beat until smooth. Stir together dry ingredients; add gradually; mix well.
Stir in mincemeat. Drop by rounded spoonfuls 2 inches apart on cookie sheet. Bake for 8-10 minutes in 375 oven or unril lightly browned.
When cool, frost with Jiffy white frosting. These cookies freeze well and taste great right out of the freezer! Great for when grandchildren drop in. They keep well for about a month for sure! My Grandma Genevieve s recipe.
