Ingredients: one young zuccini and a few roma tomatoes, grated parmesian or romano cheese, spices (Italian seasoning, salt and pepper) For best results the squash and tomatos should be about the same diameter. Directions: slice the squash in 1/4 inch slices and lay separately on a microwave plate. Sprinkle the squash slices with Italian seasoning. Then slice the tomatoes 1/4 inch thick and lay the tomato slices one on one over the squash slices. Sprinkle with salt and pepper lightly and then add enough grated parmesian sprinkled on top to barely see the tomato slices. Microwave for 6 minutes for a dinner size platter full. If your microwave doesn't rotate the plate automatically, stop and rotate it every two minutes. This is a quick and easy side dish Actual prep time is about 2 or 3 minutes.
