Baking Powder Biscuits
2 c. unbleached flour
3 t. baking powder
1/2 t. salt OR LESS, or none
1/3 c. shortening (Crisco)
3/4 c. milk
Oven 450 degrees

Mix dry ingredients. Cut in the shortening until coarse crumbs. Make a well and add milk. Stir quickly w/fork til dough starts to follow forkn around bowl. Turn onto lightly floured surface and knead gently 10-12 strokes. dough soft. Turn onto lightly floured surface. roll or pat 1/2 inch thick. I use a drinking glass (floured, upside down) to cut my biscuits. straight down, no twisting. Bake on ungreased baking sheet about 12 minutes. Makes 10.
For drop biscuits (softer version) increase the milk to 1 cup. Makes 16.

I have never found a better recipe yet. They are good for jam, jelly, butter, biscuits and gravy. Actually used drop biscuit dough in shepherd s pie and as dumplings on hearty, covered stew.
