Ethel S Salad
Ingredients:
RECIPE--ETHEL S SALAD

1 package lime Jello
2-1/2 cups hot water
1/2 cup miniature marshmallows
1 cup Cool Whip
1 20-oz. can crushed pineapple
1 cup Miracle Whip
2 8-oz.packages cream cheese
1 package orange jello (made according
to package directions)

Directions:
Pour hot water over lime Jello. Add
marshmallows and pineapple. Stir and
allow to set until cool and thick. Fold
in mixture of Miracle Whip, cream
cheese, and Cool Whip. Mix gently but
thoroughly. pour into 13 x 9 pan and
allow to set (a couple of hours in the
refrigerator would be best). Then
prepare orange jello according to
package directions, and pour over top of
previous mixture. Refrigerate until
orange jello is set.

Found this one in Corydon s Favorite
Cookbook, published in 1948 by the
Corydon, Indiana Christian Church
Women s Council, and submitted back then
by Mrs. William Seibert. Units have
been updated--no sense in dicing
marshmallows when you an now buy
miniature marshmallows, and I don t even
know if you can find a box of the old
Reddi-Whip topping to mix up...hence the
Cool Whip.
