Is is possible ta make the Kettle Syrup using a propane heat-rig instead of burning wood fer heat....and still git good results???

Making 'kettle syrup' would be the only way I would ever use propane...Can you find an old flat-top chunk stove and have a pan bent up tp fit after you remove the top?...Two 3-foot sections of stove-pipe and you would have exactly what I boiled on for years...Works great and you can get rid of lots of junk mail in a hurry that way ;-)

You can do a better job with the propane since the heat is steady and reliable. Here in New York, at our saphouse, we do our initial boiling down with a wood fire and finish it off with propane. Oil or propane would work better for the whole process but the fuel costs too much to be worthwhile. Having an uncontrolled fire helps to lower the grade of syrup. Many places now use oil and propane for everything, but they cut their boiling and fuel use in half by running the sap through a reverser-osmosis filter first. Takes half the water out before boiling.

Although I do understand the use of RO by extremely large outfits (such as the big boys in Canada) I will never personally boil with oil or gas, and RO is right the heck out of the equation...Wood is free other than my labour, gas and oil, and wear on my saws...

I like syrup that has flavour and body...RO and constant temp of oil do not allow the sugars to caramelize or create the 'correct' amount of invert sugars...Will your hydrometer say it is syrup?...Sure it will...Will the 80 year old man down the street be back to buy from you again?...Nope...

Nothing personal, and all IMHO...I just dislike Maple Syrup without the 'maple'...'Fancy' sure is pretty in glass bottles, but there is no 'maple' to it...First thing I do with that stuff is find someone from 'away' with deep pockets and let them take it back to their friends to show what discerning tastes they have LOL...

I don't keep anything lighter than Dark Amber and normally I keep B and darker for home...I even keep sludge just for baked beans...

Great...Now I am hungry...

I've got no argument with what your saying. I don't give a damn for fancy-light A syrup, but it does bring the highest price. We keep all the dark and med. amber stuff for ourselves. I prefer boiling with wood for several reasons. The cost is one, but also I like the smell of smoke and boiling sap - there's nothing else quite like it. Syrup done this way has a taste all its own. When I was a teenager (almost 40 years ago) I went to work in a Vermont sugar-woods in the Northeast Kingdom. All buckets, and we gathered with a John Deere 40 bulldozer and sled/tank, and sometimes horses. We lived in a camp with no utilites except a woodstove and 20 miles from the nearest village. When boiling time came, all we drank was hot sap or syrup (except for cheap "Old Duke" wine and beer at night). We threw eggs and hot dogs into the boiling sap to cook them, and made our coffee with the same thing. That's probably the only time in my life I was absolutely sick of maple syrup. When the trees got buddy, and we stopped boiling, just the smell of syrup made me sick. But . . . I quickly got over it. Now, spring tapping seems to bring me back to life after a winter of mostly working inside. I don't, however, carry two - five gallon pails of sap on a harness anymore. My back can't take it, and I'm on pipeline now.

Your sentiments mirror my own...I wish I had the chance to work in a maple camp...

When I was a kid we ran 1300 buckets and gathered with a Ford 9N...

I try to explain the eggs and sap-dogs to people...Most just don't get it...

Fixing to do a little cooking of your own?
Already got one request in for a sample with Salmoneye. If it is any encouragement I'll order a sample from you also.

I'm thinking if them young stallions of yours was organized, they could keep the wood cooking fires burning. Save me a few bucks on the final product as well.

Only thinkin bout it as this stage Fern...we got's a buncha maple's on the back 40 that never been tapped...prolly 2-300 trees....Mebbe a good 4H project fer the boys I'm thinking....:^)
