How to start sweet potatoes

I remember starting sweet potatoes in a jar of water when I was a kid, and would like to do that again this year, then plant them. Can someone please tell me how to do this and when I need to start them? I can buy sweet potato plants, but only in bundels of 25, which is way more than what we need, besides it's always nice to do it yourself. Thank you for the help.

Good Evening. I was talking to a guy in the store Monday. He had one sweet potato. That was what he is doing. He said do not change the water the potato is in. Keep adding to it. Pull off the sprouts and put in another jar of water. Mom used to do that but i don't know. Good luck. Archie
