Black Walnut Syrup

I made black walnut syrup on March 25/04. The results are very different from my maple syrup process. Unfortunately the sap run from the 11 walnut trees (1 tap per tree) was so slow I had to freeze the sap for a 4 week period to get about 50 qts of sap. In comparison the 45 maple taps yield 1-1/2 to 2 garbage cans of sap per day The boiled yield was 1 qt of black walnut syrup and a 1/2 qt of gel that tasted the same as the syrup. The taste was very unique and quite strong. I wouldn't use it as a food topping as I do with the maple syrup but I think it could be used quite satisfactorily in cooking. There were none of the typical impurities in the boiled sap that need to be filtered from maple syrup. The sap remained clear from start to finish except it was very dark and when filtered left a substantial amount of thick gel. My maple syrup is a clear honey colour. A newspaper article can be read looking through a full 1 qt jar of maple syrup. The Black Walnut syrup is clear but very dark and nothing can be seen looking through a full 1 qt jar. Of the little information I had on black walnut syrup none described the thick gel as a byproduct of the process. I would like to know what it is. I suspect it to be some sort of gelatin. Only 15 of the 28 walnut trees are presently large enough to tap but I was hoping to have a saleable byproduct. So far it looks grim. Unless the sap flow improves I will only be able to produce enough for my own consumption. I will have to forget about tapping the 9 butternut trees. Since butternuts are nicer tasting than the black walnuts I thought maybe the same would hold true for butternut syrup. If the walnut syrup was a success I was going to try the butternuts next. Has anyone else made black walnut syrup and what was your experience. Any information concerning the black walnut gel byproduct would be appreciated.

I just finished making black walnut syrup for the first time. I've made maple syrup for 25yrs and I'm convinced the black walnut is better. Maintained a rolling boil, turned 61L of sap into 1.5L of syrup, dark amber coloured, no gel what-so-ever. Used a combination of apple / pear wood and smaller pieces of cedar to increase temp when needed. Wonderful experience, highly recommend it

have you had any more success with the black walnut syrup? I would like to try it. I read somewhere that maple sap is black when the sap has more caramelizing in it, and if you harvest late in the spring. Darker colors can also result from how you cook it. Maybe black walnut is the same. I sure would like to taste it.

I only made the walnut syrup the one time. For the effort and the yield I did not want to drill any more holes into the trees. The people that did taste the syrup were split about 50/50 as to whether they liked it or not. I preferred the taste of maple syrup over the walnut syrup.

I would not even consider butternut syrup...

I would not have considered Walnut either as I don't have any to consider...But I do have butternuts...The taste of the meat has nothing to do with the flavour of the sap IMHO...I would not think of Butternut, as the wood itself stinks to me when drying or burning...Others I would not consider would be Poplar of any type or Willow of any type...Both smell like cat pee to me, and butternut is not far behind when drying or burning...

The ones I have considered are of course Birch, and then Shagbark Hickory and White Ash...I have lots of ash and the wood smells almost as good as Maple when drying and burning...I have in fact 'force-dried' Ash on top of my Ashley, and it will weep sap and condense to 'candy' that the Girl and I will then fight over...

Seems to me that my black walnut pop leaves later then the other trees. Do you suppose that the sap flow is later?

I thought of the same thing but if sap flow is best when the evenings are below freezing and the days are above then that time is now. There is no later if the temperature swings are necessary for tapping.
