Reading some of the stories & stuff on here, about eating this & that, got me thinking, about when I was a lot younger.
I grew up on a little place, 40 acres, in SE Indiana, that my Folks had bought as a place to raise us boys. I'm the oldest of nine, 8 boys, & 1 sister.
Anyway, one summer I sorta worked for a Vet, whenever he needed extra help, mostly with
dehorning & cutting calves, or cutting & vacinating shoats. A dollar an hour & hard work at that.
A couplea times, where it was going to be a bigger
place, I'd take along two, 5 gallon plastic buckets, with snap on lids.
Yup, you guessed it. I got to take home some of the hog fries. Mom would clean them & set them in the fridge in big pans of salt water, to soak over night. She'd put some of them in the freezer. But she'd fix some for supper, the next day.
She'd slice them roll them in egg & flour, & fry them.
She always told my brothers, they were pork cutlets. Everybody ate good at our house.
I haven't had a hog fry sandwich in years & years.
But, I bet some of you Folks have that on occasion.
Last time I had one it was at a tavern, a few years ago, that had 'em on Wednesday nights, with quarter-a-glass beer. Anyone remember that?
I do know a place that serves brains & eggs, on
Saturday & Sunday mornings, though.
