We do a couple of pig roasts every year, and what I ended up doing, is to raise a hog, and either butcher, or swap for some fresh hams. Easier to cook, and feed more.
When we do a whole hog, I put it on a spit, and don't stuff it. It's really hard to get some stuffing done.
I can't tell you just how many people a 50 lb. hog will feed, what I can tell you is, you will be very surprised how FEW it is. Lotsa bone and air in one that size.
Good luck
Ron
