Got to talking to a chinese restaurant owner
the other day and I mentioned my organic chicken
operation I'm starting this spring. I said it was mainly for my folks and wished I was large enough to get a meat selling/packing license. Then I could sell to anyone.
I said that if I could I would have an open house for clients to inspect my operation for cleanliness.
He said not to worry about it and bring them in but leave the feathers on one wing. He was very interested and anxious even. Apparently the chinese are fed up with the caged low quality commercial white legerns that they're getting now.
They want the original range fed breeds (RI reds).
The ones that dress out to "mini turkey" size. The chinese know quality food. He said he'd open me up to other restaurants too if I can guarantee a supply. Wasn't bothered a bit about licencing.

Spence, there is actually some leeway there for people to dress meat for someone else like custom processors do but that won't work for restaurants. The new food safety rules (what I do for a living now) are a mess and will make this not very fun for you. You could sell the live chickens to anyone you want but that restaurant is taking some big risk by dressing it themselves. Not many custom people mess with chickens anymore because it isn't enough money. The USDA just made Ratites and Squabs (ostriches and pigeons)go under madatory inspection this summer. THose consumer groups are very adamant that their job isn't done until nobody ever gets sick or dies for any reason. Makes the lawyers wealthy.

USDA would have your butt in the squisher real quick. Two people can keep a secret if one of them is dead, and that isn't even close here if the Chinese guy is going to freely spread the word. The wrong ears will always hear it sooner or later. What about his buying your chickens live and having you deliver them to a USDA processing facility? I don't know if a large plant will even accept but a minimum order of chickens, but small plants usually try to oblige smaller orders for custom processing.

I think You'd be skatin on mighty thin ice since it would be goin for PUBLIC consumtion.
That means it has to be USDA inspected !!!!!!
When We ,all of Us sell animals to people and run said anilmal thru a processing plant in effect We are sellin tha critter to, and haulin it, for Them. That meat cannot be resold unless it was USDA inspected. Even tho tha inspector may have been in tha next County flirtin with some widder woman at tha time.

Just last month set thru a lecture on how Our benevolent USDA helps Us Who produce meat. Basicaly the word was that to work for Those people at tha home office You must be a Idee-ote of tha first water. Seems Their first purpose in life is to stop People from sell'n livestock and or parts thereof.Export is a real nightmare!!!!!!

We sell Ostridge Jerky for dogs. When we send it to Japan we have to have a FDA Food inspector sign off on it for every package sent. They never see the product we send them 25.00 and the give us a letter saying it is OK what a rip off. We use USDA Choice Inspected Ostridge Meat only in it Smoked with Hickory. Sells good at 2.90 a ounce in Japan (their price) they buy our Dog cookies too and we figure they must sell them for around $20.00 a pound to break even with the Air Mail Shipping cost. Dogs over their are real costly and people who have them are the rich ones. You don't want to get into selling stuff for people the hassles and paper work will take almost everthing you make. I think that'd be great, except if the Feds find out, they're gonna hang ya out to dry...

I've thought about the same idea, and if you get big enough to make any money, the regulators beat ya stupid, and eat any profit you might have envisioned. Tyson has too big a lobby.

I've got a friend who lives just on "the beltway" in Washington D.C. Its a somewhat isolated cul-de-sac despite the nearness of the city; only a few houses, and a little unspoiled land around it as a buffer from the world.

Anyway, his next-door-neighbors are an Asian family who are connected to an Asian restaurant nearby. He is both amused and amazed that they do "all kinds" of food preparation in their house and a little outbuilding in their backyard, so this arrangement doesn't sound like it is out of the norm. Yep, the Feds will likely string them (and you) up if they ever find out, but the food is good, the prices are reasonble, and they're working hard for the American dream so who cares (other than Tyson)?

Not me, that's for sure. I grow my own for that very reason, and a few of them find their way by some mysterious process into other folks freezers ":^)
