Jalapeno peppers

i need help . how do you tell when lalapeno peppers are ripe? i have 4 plants some are black and most are green. i would like to pickle them and can
bob( who has pickled eggs,cukes,and other veggies but not peppers)ny

We have peppers of many varieties here..and the green ones will turn either yellow, red, or orange when ripe.. But those black ones? hm..don't know..gotta check..maybe burgundy??
I wanna know also..

Whatever you do.. when you get ready to process
them.. I sliced and froze mine.. WEAR RUBBER
GLOVES.. I failed to.. (I was a young 21 years
oldl) and later that nite I was hopping up and
down in pain till about 5am.. NEVER FORGOT THAT!

Yep, they'll let you know. One of the guys in the shop wanted to make a batch of jalapeno jelly one time, so he had to scorch/peel like a pound. He did, and wore rubber gloves. But later that nite, he forgot and took his soft contact lenses out. The next morning he came in late, eyes all red and he had to throw the lenses away. The pepper oil went right into them. The jelly, BTW was super! :)

oh my god..I can imagine a burn like that!
I live in a country where peppers are part of our every day cooking..hot and sweet alike..so we learn at an early age to handle with care.
