Zucchini lasagna?

Kellyb, i thought you were kidding! I've heard of zucchini everything - my sister makes pumpkin pie outa the stuff - but lasagna? Live & learn. Sounds right good too!

And..............Zucchini pizza too!

Just peel, cut zucchini in pieces, place on pizza pan, add sauce and your favorite toppings, bake at 425 for 20-25 min. or until done. Try it, it is tasty.

SusieQ, I have a question.
There is no pizza crust?
Just the zucchini on the pan and toppins, etc?
That sounds great if I understand right.
I love zucchini; zucchini bread is great, too.

Yep..............the crust of this pizza is the thin slices of the squash, and very tasty I might add....been around for a long time. Since my sis has crohn's disease, she gave this receipe to me.
And for all the carb...watchers, another great use for food in season right now. Enjoy.

Well that looks to be the actual thing.. I'll get
my recipe from my aunt.. It's very similar but not
the actual "lasagna" itself.. just tastes like
it.. I'll update you later! Thanks for "this"

Abstatutly. Been eating that for years. Fairly new one around here is zucchini pancakes. Delicious

Are those like the potato latkes? I grate the squash with onion, leave in a collander to drain good, put in bowl, add a couple tlbs. of flour, 1 egg or egg substute, mix, drop on hot iron griddle, press with pancake flipper, brown on both sides, it is so tasty, can eat it on a bun part is zucchini can be grated for the freezer to save and use later when they are out of season. That is really nice.
