Frozen grapes do make good wine. Some winemakers like to freeze them first because this process helps to break down the emzymes a little more. Winemaking can be as complicated as you want to make it or as simple also. There is a guy on this board called OLD JOHN who can help you more than I can. Main thing is keep everything clean (read as sanitized). I have included a link below that is really helpful. The sites owner (Jack Keller) will answer most questions via e-mail) Good luck

Yes. We have a local winery here in Missouri that keeps a particular kind of grapes on the vine through the first part of winter. They make a special wine out of it. The wine is thicker and much stronger flavored. The consistency is kind of like a watered down syrup and the flavor is almost raisin-like. It is very good.

As far as I know the fermentation process is the same and the frozen grape makes all the difference.

It's called Ice Wine...but I think that the grapes have to be diliberately frozen and picked frozen, used frozen..google "ice wine"

Do you think it makes a difference when they were picked? It might - I just dont know. All I know is the wine is really good.

If it does matter and the grapes have been frozen a while, frozen grapes make a great snack. Kind of like a mini popsicle but better.
