How do I know when holstien is ready to butcher?

We have a 16 mo. old holstien steer. I made an appointment months ago to have him butchered
10-20-04 today is 10-9-04 and we are not sure if we should keep the appointment. The weight tape says "1204"lb but we have read about waiting till he is "filled out" so my question is....what is ment by filled out and how do I know if he is? also is 1204 a good weight or shoud we let him gain more?

I hope you like hamburger bacause they are so bony thats about all there good for. Next time get a black white face will make very good steaks and roasts.

Welp, I'm no expert, but I worked on a Holstein dairy farm right after I got out of high school. I always thought they were one of the biggest, boniest cows that ever was. And the steers were just the same. They're always going to look skinney and bony even when ready to market. So go ahead and trust your tape. Jim.

vicki you got all good advice below so i,ll just add , im not sure where you live, but if its a cold climate in the winter he won,t do much better , you could pour the feed to him all winter and waste your feed , they are not beef cattle and don,t do as well feed and weight wise in the cold months.did you know that mc donalds buys them up at least up here in canada.they used to have their buyer grab all of ours.now i pay them back by eating way to many big macs lol.

This might sound different but how flat is his butt and back? That would be a good indication of being ready for butchering. The last bunch of holsteins steers I raised was over three years ago, 80 head on a little to no roughage diet. I sold them when they weighed 800+ pounds because I was carrying 1500 lbs. of feed a day in 5 gallon pails. I was in great shape!

His back is real flat, Im not sure how to tell how flat is butt is. He is eating around 30 lb of grain a day.
After reading all the answers to my question we have decided that we are loseing $$ by continueing to feed him any longer.
Looks like "BOB" will be "BEEF" on 10-20 thanks for everyones help>>>>

Reads you fared better than your critters. Get the same exercise here. That is right up until a few joints have started to wear out. See3ms I’m making two trips for the same ones one would had taken care of. (grin)

16 months is long enough to feed your holstein. He'll never fill out like a beef animal, but the meat will be quite good. When I was first raising some bottle calves, I kept a couple of holstein steers until 18 months of age, and decided they should have been processed earlier. They didn't grow enough to count during the last couple of months I had them.

Darned if a Holstein isn't but the hardest beef critters to judge for finish. So dairy the fattest of these cattle look thin.
Have butchered a Holstein for our use here. This coming about having purchased a dairy calf now and then for one of our Shorthorn cows when they’ve lost a calf. A cow raising a calf has something to do while staying out of trouble. Never did fatten one up enough to sell to a freezer beef customer. Ate them ourselves. At age six to seven months have taken them off cow and introduced them to calf primer, slowly introducing them to ground corn replacing the primer. Have always fed our steers all the corn they would eat finishing their upbringing at about 12/14 months. Their last days they would be easily eating 25lbs a day. Like I say never seen one fatten up like a Shorthorn. But, upon slaughter they were nicely marbled and easy eating with a good flavor with a bite.

I always figgered the best time to do almost anything including butchering was when you got a round tuit.

Vicki, I think that would be up to you about weight or filled out. At 16 mo old he/she shoild be filled out enough. The most my beef for butcher weighed around 900 or less but i would put him/her in a small stall(clean) for 8 weeks give him all the good hay and clean water he could eat and drink and 20 pounds of grain a day and the fat would be so yellow and the meat would be tender but thats me, others may have diffront and better idears.
