Hello All,
My neighbor gave me a califlower, rooster comb, what ever mushroom, big one. I fried some and it is most excellent. Now what do I do with the rest I can't eat in the next few days? Do I par boil before I freeze it or just freeze it. Your response is appreciated. Ron in Indiana

Ron,
I have only dehydrated or frozen mushrooms. A dehydrated mushroom should not be fried first (least from my experience). Clean it good and put it in the dehydrator. If you fry it and want to freeze it, do everything you can to get as much fat (oil) off it.

It really depends on what you fry it in. Lard is really bad cuz it turns rancid in the freezer over a period of time. Vegetable or peanut oil is better but any fat (animal or vegetable) will eventually go rancid even in the freezer. It would be a shame to ruin a good 'shroom on bad preservation.

I would recommend cutting it up into smaller pieces and using it in different recipes. This way you don't have to worry about preserving it.

I have fried mushrooms and then froze them or you could make a sauce and add the mushrooms then freeze. Hope this helps.

I don't know if you could freeze them or not,years ago we use to go out in the woods an pick sponge mushrooms but i don't think grandma caned any. What part of INDIANA are you from? I'm from nw indiana. geo.h
