Snapping Turtle Soup

Turtle soup is a delicacy here in Cajun country. The one made at the Commanders Palace Restaurant in New Orleans is heralded as "good as it gets". I've never made it myself mainly because cleaning the turtle is the hardest part and a real PITA.
Go to Google and you can find all kinds of recipes for turtle soup or just about anything else.
