Any of you ever make sauerkraut?

I thought about making some.
I have never had homemade and everyone is always saying how much better it is.

I've got to find out for myself.

i make it every year. you just shred "late" cabbage with a cabbage slicer or food processor (i use both), place in a crock. sprinkle in some uniodized salt and mix in. then punch it down - this should bring liquids up. then another layer, and so on. i think the salt amount is 1/4 cup to 25 lbs cabbage. then cover and let set 8-12 weeks, or more. i seal mine with a double garbage bag filled with water on top of cabbage, then twisted shut. enjoy!

many years ago, we used to make it every year. sorta forgot the exact process, but it was rather involved with changing the salt water brine quite often, something like everyday for 2 or 3 weeks. had to have two 3 or 5 gal crocks with was sure 'nuff better than store bought, but troublesome to make. search google for some homemade recipes.
