Mmmm...Fresh Venison...

I am trying to sell a boat for a friend who happens to be a taxidermist...Some of his 'clients' don't want their meat, just their mount (please do not start an 'ethics' debate over this)...I just stopped in to get another pic of the boat for someone, and he handed my a 5lb bag of nice slabs of meat...A pound is already fried and half eaten and my keyboard and chin are splattered...

I wonder what the poor people are having for lunch?

Our camp has got 4 deer plus a bear this year, so I've been eating venison pretty much steady for the past few weeks. I did a canner full of quart jars of stew meat, and we had some "slim jims" made up. The rest has been eaten fresh. The bear meat is on the menu for this weekend, after a week of setting in brine. My buddy got him a few hundred yards from a large cornfield, so I'm betting he should be pretty tasty--at 144 lbs he's small enough to still be tender and not too gamey.

i just finished some "Bear" chops a friend gave me. i croc potted them all day (yesterday) with a jar of salsa. very good!!!

I am about the only person I know that will gladly take all the free bear meat I am given...Get them when they have been eating nuts and berries for a month, and they are some fine eating...

Dump-fed bears need not apply...

We have a great Deer farm in Plymouth NH..Les I am sure knows all about it but the man who runs it sure knows his deer!! Haven't tried it yet but maybe a new thing to do for Thanksgiving?? Anyone know how to cook a Venison roast??
