We take the steaks and make Ostridge Jerky out of them. It tastes pretty good too. But it is sold for Dogs to eat. USDA Choise and we get it air mailed from back east to us in frozen 140 lb boxes have it processed localy with out perseritives or salt just smoked by Hickory, then we package it our selves. Mark H.

I had a neighbor in the ostrich business for several years. We always just seaoned to taste and fixed it like beef. No it doesn't taste like chicken.

Recently I purchased ostrich burgers and steak from a Tenalfy,NJ Stop & Shop chain. Tasted pretty good, although if I were blindfolded I don't think I could distinquish it from beef. I've also eaten buffalo steak. Tasty. I've also eaten Rocky Mountain oysters at Bruce's in Severance, CO. Rubber taste. Now that's another story...
