Potato candy is something that my grandmother used to make for us kids.
Boil a couple of taters, then mash them up and mix with enough butter to make a mush,
Then start adding 10x sugar until it gets like a dough that you can roll out.
Roll it out on wax paper and spread it with peanut butter. Roll in up, and slice it. Put it in the 'fridge for a while and it's ready.
It'll rot yer teeth, and send you into sugar shock but it's gooooood.

Potato candy is one of those PA specialties that are hard to match. (Like scrapple) Only takes a few tables spoons of mash potato to make a pound or so of candy.

I like shoo fly cake wayyyy better than shoo fly pie.
