got that beef cut up last week, hung 20 days. Had some hamburger last night- was fine. Got a 10 lb chuck roast in the oven right now. mmm mmm, sure smells good! dinners at 6 if anyone's around

Well I'll be hog tied and dipped in...never mind.

I thought that was insane - 20 days. May have to rethink my all knowing and ever insightful opinion ;-)

I have always hung mine 14 days max.

A 20 day cure?,heck we could'nt wait that long,always did a 10-12 day,still good its whats for dinner.:)
