That is some good looking fish there!! I miss smoked fish something bad. Every fall when I go home to IDAHO my brother and I go out and catch some trout, occasionally some salmon if on the lake. I have tried smoking some FL fish but it does not seem to have the same texture. Nonetheless, it is still good eatin!

We throw em in a brine overnite and smoke 'em with alder or apple or cherry. He is not much on hickory or mesquite but hickory is pretty good. Mesquite is a little bitter.

Hi ShepFl. I tried smoking fish once after reading about it but I can't get them to stay lit :) LOL
Just kiddin. How ya been? It has finnaly rained and waiting for the seed to sprout.
