WHAT IS THE PERFECT degree farenhiet Temp TO AGE BEEF,AND LONGEST TIME . AFTER when does it BECOME A DIMINISHING RETURN?

Hi Larry,
Many years ago I met a guy in South Carolina that ran a steak house as a hobby. He had five or six walk in coolers set at different temps, from warmer to cooler. He put his sides of beef in the warmest one first and moved them on down after so many days. I had one of his heavy aged steaks and it was the best I have ever eaten anywhere. Sorry I don't remember the temps and length of time in each cooler. Good luck.

Old timers always told me that aroud 40 degrees (not freezing) and 7 to 10 days.
