The other day I asked about a receipe for pickling mushrooms; I really was looking for a receipe for marinating those little suckers. Any hints? Thanks from Texas

Here's one:

Basil Marinated Mushrooms
Just mix and chill for a few hours.

1/3 cup - Olive Oil
3 tbsp - lemon juice
1-1/2 tsp - dried basil
1/2 tsp - salt
1/4 tsp - pepper
1 pound - White Mushrooms, halved
1 medium carrot, shredded

In large nonmetallic bowl, combine oil, lemon juice, basil, salt and pepper. Stir in mushrooms and carrot. Cover and chill several hours, stirring occasionally.

Of course you could add other spices you like, or make without the carrots, etc.

Saddlebum.....maybe?    Posted 06-26-2002 at 21:20:51       [Reply]  [No Email]
Don't know if this is what you're looking for, but these are tasty and easy to make: Take whole mushrooms, clean them, put in a large skillet and cover with about 1/2" of good red wine. Simmer until the mushrooms have soaked up the wine and turned red. Add wine as needed so they don't dry out and stick. Good warm or chilled.

Try just soaking for an hour in Italian dressing, the regular kind, not creamy.
