Questions about hot sauce and pickleing hot cherry peppers.

How do you pickle hot cherry peppers? Like you find in a resterant buffet line. Tastes like there is lots of vinager, but how do you do it? also, I need some recipies for making hot sauce, not the chucky kind, but a smooth sauce, almost tastes like they put some oil or lard in it and it is very hot, but just sauce, not chucks of any veggies in it at all. I go to this mexican rest. and it is great sauce, but they would never give out the recipe, but do any of you cooks know what I am talking about.
