Zapple Pie

If you got Zucchini then you have the main ingrediants. This is for the oversized summer squarsh that excaped detection
Instructions follow:

Toss together 4 cups zucchini peeled, seeded, cubed and cooked until tender crisp.

2 tablespoons lemon juice
Dash of salt
Mix in a bowl 1- cups of sugar
1 tsp. cinnamon
1 tsp. cream of tarter
3 tablespoons flour
Dash nutmeg
Add zucchini to mixture and mix well, it will be runny but that's OK.
Dump filling into 9-inch crust, dot with butter, then add top crust.
Bake at 400 degrees for 40 minutes or until golden brown.

Glad somebody still finds a use for zucchini - i've had them every possible way. Got to where i dreaded my dear sister's visit for fear she'd have another trunkload of those proliferous things. One sure thing, as long as they grow, nobody can complain of starvation.

Before zucchini, the only sure crops around here were rocks and kids. :)

Zucchini season is one of the only times we lock our car doors.If you leave em open,parked somewhere,you're liable to be "squashed".Most pumpkin recipies(punkin bread,pie,cookies etc)also work well w/zucchini.

Where was zucchini when We was starvin ta death in tha Dust Bowl days here in S/w Mo,Okla et al ???????????????????????????????????
