Sunflowers- when to harvest?

I planted o row of sun flowers in our garden this year and don't know what I'm looking for as to when to pick. Heads are all droopy and some stalks have bent or fallen over, should they be ready now? I'm in central Pa. Thanks for any help.

I had a small patch about 20 by 30 , the birds and squirrels took care of mine for me.
The squirells would climb the stalks and cut the smaller heads off then drag them to the nearest tree to eat them, the bigger heads they would sit up there and eat, what they didn't get the blackbirds did.
Sounds like they are mature if the heads are bent over, maybe you could cut the heads off and put them where the varments cant reach them, then you could shell them out when you feel like it.
