Sorgum - how is it made.

While in Missouri this week. We found sorgum on the table at all the restaurants, it was a honey like surup. I was wondering how it is made. All I can find is about a grain. Sorgum - Sorghum

I use to have the job of keeping the mule going round and round. Had to keep a 2X4 handy to keep the mule from eating the cane.

You mix the finish product with fresh cow salve butter. You can tell if its mixed right if you drag half of a cathead bisquet through it and it tears in half in two.

This is where they came up with the proverb that breakfast is the best meal of the day.

I know you know whut you're talkn' bought!Fresh pure honey,sorgum,or maple syrup is heavenly!Besides smoked dead hog parts,it's what a biscuit was invented for.

Sorhgum is a plant...like sugar cane, it is pressed and the juice is boiled down...this is molasses...if you refine it further it will get to the honey coloured stuff you are seeing on the table...

Least that is my understanding...what do I know...I boil tree sap for syrup...

How many gallons of sap does it take to make one pound of sugar? I remember maple sugar candy, a kind of fudge, from my childhood.

Takes appx. 40 gallons of sap for a gallon of syrup.

Ask Les-Fortunate...His family has been sapping for longer than I have been alive I understand.

I have been making syrup off and on since I was a kid...ran an operation for three years while in highschool of 1300 buckets for this old Gent...only made syrup...never went as far as candy or 'sugar'...

Salmoneye, we grew sorgum in with the cattle corn and I remember it being reffered to as sugar cane as well.

Sorgum cane,kina like "sugar cane".grows about 5-6 ft tall mabe more dependin on soil etc. Leaves are NASTY,long with razor sharp serrated edges which same will draw blood on Ya fast'n often!!

Some folks burn tha field ta remove tha leaves,We being brutes for punishment stripped em with a corn knife. Hot Aug',bare hide,blood soaked.
Ya cut tha cane, take it to tha mill which is generaly a three roller affair,rolls set vertical. Use a horse or mule on a lead pole ta turn tha blamed thing with. Critter goes round'n round,on'n on.Sap runs out of crushed cane into a trough and hence to a bucket.

Bees,Yellow Jackets,wasps,Flys,UFO's,Hornets all flock ta pertake of tha sticky stuff.

That pole goin round is right close to tha ground so whoever is feedin tha mill has ta hunker down or work on Their knees and try ta keep from gettin brained by tha lead pole.

Would'nt take much ponderin ta figure out whose job that was!!!!!!!!!!
Next tha juice goes to tha cookin trough. What We used was home made from a sheet of galv' steel and 2X8 boards,looked sorta like a jon boat or over sized mud boat.

This sat on rocks and was tilted jest a smidgin and high enough up so a good wood fire could be kept goin under it. Was also next to a spring so We had water.

You get tha thing goin and just cook tha sap pourin fresh in at tha top'n takin sorgum out tha lower end. Ya have a big wooden padle thats used ta scoop tha bad stuff off tha top,it gets dumped off ta tha side where it attracts more vermin of tha stingin type.

Any ways, after it's cooked down it makes tha most deelektable eatin a body ever could hope for.
Now, tha differance twixt "SORGUM" and "MOLEASS'S" is Ya says pass tha Sorgum'n when thats et Ya say pass mo'lassas.

We made sorgum as a cash crop,many gallons of it and I still like it better'n any other IF it's good lass's. Most of what the store sells is "BLACK STRAP" it's cow feed,good stuff should be light golden about like honey to just a tad darker.

It has been said and I believe You can pretty well tell tha color of the soil the cane was grown on by looking at the syrup color.

In truth to My way of thinkin tha only stuff that can mabe edge it out a tad is "GOOD" Maple syrup,tha kind that comes out of a tree stead of bein manufactured out of a bunch of garbage with a drop of sap ta make tha label legal..

That's interesting there Hogman, we just cut it with the corn using a corn hoe (short handled hoe) and put it through the cutting box to feed the cattle, as soon as they heard that box humming they would come running and take their own spot around the wagon. It was as jucey as the corn stalks and yes the bees where there too. We only bought Black molasses, by the barrel for the cattle and sheep, used some for cooking too. We had lots of maple syrup, and the colour of it changes with the season, darker in late season.

We raked tha leaves up'n fed em but tha only way to strip em was while standin. Take a real sharp corn knife and start at tha bottom'n just bring it straight up and tha leaves would go flyin up and come down all over Ya and I do mean draw blood. It was miserable work!!!!! Next We cut tha cane (corn knife) bundled it loaded tha bundles on tha wagon'n hauled em to tha mill which was over on Grandads place bout a quarter mile.Anyway You did not no way want those leaves to go through tha mill,would have made a super disagreeeable job many times more so!
You fed tha stalks inta tha mill,sap came down tjha middle'n tha crushed stalk came out tha other side after which they were piled and later fed.

I am still piddling with it, making it tighter so I can use it part time this winter for my eBay 'office'...Picture-taking and packing and such...

And technically...it is the Wifes' Green House, by the way ;-)

Only going to run a couple hundred taps in the spring, so I am planning on using a 2'x6' evaporator...should fit fine in this shack for one year...then the whole shed is moving up back in the sun, and the wife will take it over for starting plants for the garden, etc...

Then...next year...I get to build the permanent sugar-shack...going to be 13'x18' or so...Already have most of the lumber scrounged up...and the tin for the roof too...

By the way...the 10'x12' 'Green House' has come in at less than $200, and $70 of that is the PVC panels for one side of the roof...
